Vegetable Cutlet

Vegetable cutlet served as a tea snack. It can also used to make vegetable burger.

  • 2 cups cubed potatoes(2 large)(sweet potatoes or yam)
  • 1/2 cups green peas
  • 1/2 cup cubed carrot(1 large)
  • 1/2 cup beans chopped(6 to 8)
  • 6 tbsp bread crumb or 1/2 cup thick poha or roasted besan
  • 2 tbsp besan or chickpea flour or rice flour or corn flour
  • 3/4 tbsp ginger grated
  • 1 to 2 green chilies finely chopped
  • 1/2 to 3/4 tbsp garam masala
  • salt as needed
  • coriander leaves handful chopped
  • oil as needed


  1. Boil veggies ,Drain excess moisture if left.

  2. Mash them well.Add bread crumbs,powdered poha,salt,ginger,garam masala and chilies to the veggies.

  3. Mix it all well ,it must be a non sticky dough.

  4. if needed add more bread crumbs to make it non sticky.

  5. make 13 to 14 patties and set aside.

  6. make slightly thin besan or rice flour.

  7. dip each patty in the batter on the both side.

  8. place them on the bread crumbs

  9. place them aside for 5 to 10 minutes

  10. Heat oil in a pan and fry them on the both the side until golden color.

--Method to Make Green Chutney:

  1. 1 cup coriander leaves,1/2 cup coriander leaves.1/2 cup mint leaves/pudina,1 tbsp fried gram /dalia,1/2 to 3/4 cup cumin,salt as needed,2 to 4 hot green chilies,1/4 inch ginger,2 to 3 medium sized garlic cloves.

  2. lemon juice as needed.

  3. Blend all the ingredients together with 2 tbsp water.

  4. add lemon juice and mix.

  5. serve vegetable cutlet with green chutney.
